Christmas Eve is almost here and for most Portuguese households that means cod for Christmas Eve dinner, Seafood at midnight and many many desserts!
Traditionally many families boil the cod and eat it with boiled potatoes and kale, drizzled with olive oil of course. At our house we have the cod fried, with mashed potatoes and shredded carrots. That too gets drizzled with olive oil sauce. The cod is simply covered with yellow corn flour and then fried. It is super easy!
We usually start with octopus that has been cooked, cut into small pieces and tossed with parsley, olive oil and vinegar.
Every Portuguese table must also have Bolo Rei at this special time of the year!
