Coconut Tarts/Queijadas de Coco

Yield: 24

Ingredients

  • 2 cups of sugar
  • 3 eggs
  • 3 tsp of soft butter
  • ¾ cup of all purpose flour
  • 2 cups of milk
  • Shredded coconut (I used 200gr. Pkg about 2 cups)

Instructions

  1. Preheat oven to 350 degrees.
  2. Coat cupcake pan with butter or use parchment liners to keep tarts from sticking. If you use regular liners the tarts will stick to the liners, you will have to butter the liners.
  3. In a large bowl mix sugar, eggs and butter together until well blended.
  4. Add flour and coconut and continue to mix.
  5. Slowly add milk, mixing. Batter will be loose.
  6. Pour mixture into cupcake pan, mixing occasionally as you pour. Do not overfill cups.
  7. Tarts are done when the edges are a golden brown, middle will be soft. Allow tarts to cool slightly in the pan before removing.

  • Hello Renee, I would say about 20 minutes. Varies depending on your oven, keep and eye on them the first time you make them until they are a golden brown around the edges.

  • Hi Sonia, do you mean what I wrote on no.3? “Batter will be loose”, I mean that it will be liquid consistency not very thick. I hope that helps. Let me know if you have any other questions.

  • Thanks Ann, I am so happy you like them. If you like coconut you may like the lemon coconut squares as well. Hope you enjoyed Porto, it is a great city. I can't wait to go back!
    hugs,
    Margaret

  • Hi Margaret, I have just made these and they are delightful! Me and my my husband are just back from a week in Porto and we are missing the treats we had each day with our coffee, these are just the ticket! I may try your green soup next. Thanks for posting the recipe!

  • I haven't tried these yet but you can bet I will…. I don't know why there are no comments but I know I'm drooling 😀
