Coscorões/Portuguese fried dough

These crispy fried treats are perfect any time of the year but you will find them in most Portuguese homes around the Holidays.

Known as Coscorões, these treats have a nice orange flavour and a delicious sugar and cinnamon topping.

I have to admit that my favourite Christmas dessert  is Bolo Rei/Kings’s Cake but this a very close second.

My daughter made these for her class as a treat when she did a presentation on Portuguese Christmas traditions.

They were a hit with her professor as well as all her classmates.

Coscoroes recipe: (you will need a food scale)

60 grams of sugar

60 grams of butter, melted

4 eggs

Rind of one orange (grated)

Juice of one orange

Pinch of salt

1/4 cup of Portuguese brandy, “aguardente”

600 grams of flour

Sugar and cinnamon for dusting

Oil for frying (I use Canola oil)

Extra flour for kneading

In an electric mixer using the paddle attachment beat sugar, butter, eggs, orange rind, pinch of salt, orange juice, and brandy, mixing in one thing at a time until blended.

Add the flour. Continue mixing until well blended and you have a sticky dough.

When you have a sticky dough cover your bowl with a cloth and let stand for one hour.

Once it has rested for an hour, place dough on a lightly floured surface and dust with more flour.

Knead dough, lightly, adding flour until dough is no longer sticking to your hands.

Stretch dough with rolling pin until thin, cut dough into squares or rectangles. Cut slits inside squares.

Fry in hot oil flipping once. When golden brown remove and place on paper towel.

Have cinnamon and sugar mixture ready, dip fried dough in the mixture while still warm.
