Lemon sugar cookies
  • 1 cup sugar
  • 3 tbsp. unsalted butter
  • 2 tbsp. cornstarch
  • 2 eggs
  • 2½ cups all-purpose flour
  • 2 tsp. Baking powder
  • Zest of one lemon
  1. Preheat the oven to 325 degrees F.
  2. In a large bowl, stir together the cornstarch and sugar.
  3. Add the butter and mix well.
  4. Add eggs, one at a time, mixing well after each addition. Add the lemon zest to the sugar mixture.
  5. Combine the flour and baking powder; stir into the sugar mixture until dough forms a soft ball.
  6. On parchment paper, roll the dough out to ¼ inch thickness and cut with a small cookie cutter. Place cookies on baking sheet lined with Parchment paper.
  7. Bake 7 to 10 minutes until the cookies are light golden on the bottom, do not overcook. Allow cookies to cool on wire rack.
