Zucchini Banana Chocolate Chip Muffins
My vegetable garden in overflowing with zucchini…time to gather all the zucchini recipes I can get my hands on. I found a muffin recipe on Pinterest that looked delicious. I made a few changes ( just because I didn’t have all the ingredients on hand) and the whole family loves them.
Based on a recipe from Ambitions Kitchen.
Recipe:
1 1/2 cups all purpose flour
1 1/4 teaspoon baking powder
1/2 teaspoon baking soda
1 1/2 teaspoons ground cinnamon
2 medium ripe bananas, mashed
1 tsp canola oil
1/4 cup honey
1 tsp vanilla
1 large egg
1 cup shredded zucchini (squeeze out excess water)
2 tablespoons unsweetened applesauce
1/3 cup nonfat plain greek yogurt
1/2 cup semi-sweet chocolate chips
Preheat oven to 375 degrees F. Place 12 cupcake liners in muffin tins and lightly spray liners with non-stick spray.
Combine flour, baking powder, baking soda and cinnamon in a medium bowl and set aside.
With your electric mixer combine the mashed bananas, oil, honey, vanilla and egg until smooth.
Add the applesauce, greek yogurt and zucchini, mixing until well combined. With a wooden spoon or spatula mix in the dry ingredients, do not over mix. Fold in the chocolate chips.
Fill liners with batter and bake for 20 to 25 minutes or until toothpick inserted int he middle comes out clean.

I am not big on Zucchini, but I bet you could not even taste it in these, and they would be so yummy! I am going to have to make them and try it out!!
